Dr. Michael Penkin was born and raised in the Town of Greece, NY, attending Greece Athena High School. As a student-athlete, Dr. Mike excelled both on and off the field, earning High Honors with Distinction as well as earning All-Greater-Rochester Football Honors. He went on to attend Alfred University, continuing his athletic career playing four years of football, earning all conference honors and being selected as a team captain.
After graduating Cum Laude with a Bachelor of Science Degree in Electrical Engineering, Dr. Mike went on to work for Lockheed Martin – Systems Integration – Owego, where he worked in the Foreign Military Sales department of Naval Helicopters. As a lifelong athlete, Dr. Mike has been a chiropractic patient for the majority of his athletic career and realized his true passion for the profession after suffering from back problems without resolve. Dr. Caitlin Simpson grew up in Central New York where she was a three-sport athlete and was also heavily involved in her school’s music department. She discovered the chiropractic profession in high school following a knee injury from running on the cross-country team and decided this would be the career path to follow. She continued her education by attending Keuka College for three years studying Clinical Science and competed on the college’s cross-country team. She has competed in too many 5K’s to count, several 10Ks, 10-milers and has completed a few half-marathons.
Dr. Caitlin went on to pursue her dream at New York Chiropractic College where she was involved in the Student Life office and was very active in the Student American Chiropractic Association on campus and at the national level. Dr. Rachel Stummer was born and raised in Pittsford, NY. In 2015, she graduated from Ithaca College with a Bachelors of Science in Exercise Science with a Medical Sciences Emphasis. She attended Ithaca College with the goal of playing for their women’s soccer team, but endured knee surgeries in the first season; she ended her soccer career and became very interested in the realm of conservative, compassionate healthcare in order to help herself and share this with others in the future.
She became an ACSM Certified Personal Trainer and enjoyed working with staff and faculty as her clients throughout the rest of her undergraduate program. Dr. Rachel took a gap year after graduating in order to apply to graduate schools, and took this time to work for Breathe Yoga in Rochester, and developed a love of yoga as a means of exercise, mental health, and rehabilitation for injuries. Dr. Rachel began her Doctorate of Chiropractic program with New York Chiropractic College in 2016 and graduated with honors in 2019. She also began NYCC’s Masters of Science in Applied Clinical Nutrition program, graduating in 2020.
Dr. Rachel believes in offering tools for compassionate living for her patients. She sees that when we can care for ourselves through the foods we eat, the thoughts we think, the ways we move, and the ways in which we rest, we will truly live well and with compassion. Dr. Sarah Tirimacco was born and raised in Hamilton, Ontario, Canada. She is an alumni from The University of Western Ontario in London, Ontario where she earned a Bachelor of Arts and graduated with an honors specialization in Kinesiology. While there, she became interested in chiropractic, wellness and holistic nutrition. She decided to further her studies in the Doctor of Chiropractic program at New York Chiropractic College in September 2011. Dr. James D. Walters was born in Hilton, New York. In 2011, he graduated Magna Cum Laude from the University at Buffalo with a Bachelors in Fine Arts, in Dance. He has been a chiropractic patient ever since chiropractic care got him back on the stage following an injury he sustained while dancing. Following his career as a dancer, Dr. James pursued an education in Chiropractic at New York Chiropractic College, where he graduated with honors in 2019.
As a professional dancer, Dr. James has performed all across the United States as well as internationally. He has performed several different styles of dance ranging from ballet to theater dance and has performed in both commercial and concert productions. Some of Dr. James’ professional credits include; River North Dancer Chicago, Lockport City Ballet, New York State Ballet and Princess Cruise Lines. In addition to preforming, Dr. James is also trained in stage combat and has choreographed dance and stunt choreography for various dance festivals and company productions. While retired as a dancer, Dr. James still enjoys teaching and choreographing within his community where he can share his passion for the stage with the next generation of artists.
As a chiropractor, Dr. James is active in both his state and national chiropractic associations.
